I, a miso ramen lover who sometimes travels to Sapporo just to eat ramen, was strongly recommended by a ramen enthusiast friend the other day, saying "I might like it more than Sumire!" This place is "Sapporo Ramen Kou," located in Yamato City, Kanagawa Prefecture. The owner, who trained at Sapporo Sumire, opened this shop as Kanagawa's first "Sapporo Sumire Noren Buke" store.
I had heard that there would be a line even on weekdays, so I tried to go at an earlier time, but there was a long line of over 10 groups in front of the store.
In the end, I gave up that day and revisited after 2 PM the next day. There were only about 4 groups waiting, and I was able to enter the shop in about 10 minutes.

What surprised me while waiting was this sign. "Our miso ramen and shoyu ramen are rich and intense in flavor, so opinions vary!" it said. This was the most honest disclaimer I've ever seen. Since I stopped by to eat miso ramen, I couldn't wait to find out just how rich it was.

When you enter the store, it's spacious with not only table seats but also counter seats. On the table, there were condiments like garlic, chili powder, pepper, and vinegar, but when I checked the menu, it seemed there were no dumplings.

While waiting a little while drinking water, the long-awaited "Miso Ramen" (1150 yen) finally arrived. The rich aroma of miso wafted over. This is undoubtedly the unique scent of the Sumire chain. The grated ginger on top of the chashu symbolizes the essence of Sumire. This is exciting.<
On the surface of the soup, there is a thick layer of oil, possibly about 1cm thick.
First, I took a sip of that soup. Whoa!? I couldn’t help but widen my eyes; the punchy flavor of miso hit me all at once. It was so rich that I ended up drinking about half a glass of water. I briefly felt anxious, wondering, "Can I finish this?" but the more I ate, the more addictive that rich, flavorful punch became.

Next, let's try the noodles. Until now, they were covered in oil, so there was no steam rising, but as soon as I lifted the noodles, a rush of hot steam erupted. The noodles, which are supposedly sourced daily from Hokkaido, are firm and pair excellently with the soup. I have eaten at many Sumire chain ramen shops, but among them, this one stands out for its high level.
Finally, the ginger is added. The refreshing aroma and flavor enhance the already rich soup, tightening it up immediately. This ability to enjoy a flavor change is the true essence of sumire-style ramen. After this, when vinegar was added... the flavor tightened even more, and I was able to enjoy it without getting bored until the very end.
I am truly amazed that I can enjoy such a high-quality sumire-style ramen in Kanagawa. Especially on weekends, there will definitely be a line, so please visit with time to spare.
