[How to Make]
1. Season the ground meat

Put the ground meat, grated onion, egg, miso, breadcrumbs, salt, Ajinomoto, nutmeg, and black pepper into a bowl.

The miso that Ryuji often uses is this one. If you're a fan of Ryuji's recipes, you’ll want to keep it stocked at home.
2. Knead the meat mixture until sticky

If the grated onion makes it a bit watery, adding more breadcrumbs will help as they absorb the moisture.
3. Form the meat mixture

Once well kneaded to a smooth texture, divide it into two parts and shape it into hamburgers. Indenting the center will create a round puff when cooked, giving it an appetizing visual.

4. Cooking the Hamburger

5. Steam and bake the other side as well

Flip it over and steam and bake the other side for about 3 to 4 minutes. Press the center of the hamburger with a spatula or similar tool; if it feels firm and springy, that’s a good indication that it’s cooked through.
6. Add water and steam-bake further

Add 3 tablespoons of water (not included in the measured amount) and steam-bake on low-medium heat for about 2 and a half minutes. This prevents sticking on the bottom and ensures even cooking through steam.
7. Place cheddar cheese and melt it

Stack two slices of cheddar cheese to create thickness, then cut into a rectangular shape. After overlapping the cheese in an X shape, place it on top of the hamburger.
Just by adding cheddar cheese, I think of the Cheese Burger Dish from Bikkuri Donkey.
8. Cover and melt the cheese

Once you place the cheddar cheese on top, cover it to melt the cheese.

9. Finish by pouring onion sauce

Since we use the secret ingredient "miso" in Bikkuri Donkey's hamburgers, the richness of the meat and the miso blend perfectly, making it easy to keep eating.
The meltiness of the cheese is perfect. The creaminess of the cheese and the deep, spicy flavor of the hamburger make it impossible to put down my chopsticks! This time, I used the same 70% cheddar cheese mixture as Ryuuji-san, but according to him, with 100% cheddar cheese, the cheddar cheese flavor stands out even more. My husband, who is usually picky about the taste of dishes, even said, "Make it again tomorrow!" So, I think I'll try making it with 100% cheddar cheese next time.
