The main ingredients of "Supreme Lettuce Fried Rice."
**[Ingredients]** Salad oil: 2 tablespoons Salt: a pinch Pepper: to taste Potato starch: 1 teaspoon Shrimp: 5 pieces (shell-on banana shrimp recommended) Eggs: 2 Hot rice: 200g **[Seasoning Ingredients]** Ajinomoto: 8 shakes Salt: 1/2 teaspoon Lettuce: 2 leaves (about 70g) Oyster sauce: 1 1/2 teaspoons Sake: 1 tablespoon Five spice powder: 1 shake Black pepper: three times as much as you think

[How to Make]

1. Sauté the shrimp shells

Heat salad oil in a frying pan and sauté the shrimp shells until they are golden brown. *Due to the shrimp with shells being sold out, I used peeled shrimp this time. This step has been omitted.

2. Sauté the shrimp meat

Season the shrimp meat with salt and pepper, and coat them with cornstarch. Remove the sautéed shrimp shells and add the shrimp meat to the frying pan, sautéing until they are nicely browned.

3. Sauté the eggs and rice

Pour the beaten eggs into the hot frying pan, and immediately add the rice and stir-fry.
Do not reduce the heat, and stir-fry all at once; this is the key to achieving the fluffy texture of fried rice.

4. Season and add lettuce

Once the rice and eggs are mixed to some extent, add 8 shakes of monosodium glutamate and 1/2 teaspoon of salt to season, then add 70g of lettuce.

5. Season further.

Add 1.5 teaspoons of oyster sauce, 1 tablespoon of sake, three times the amount of pepper you think, and a pinch of five-spice powder, and stir-fry.
If you add too much five-spice powder, it will turn into authentic Chinese fried rice, so the key to making it "street-style Chinese" this time is to use it moderately.

6. Plate the shrimp and it's complete.

Return the shrimp that you set aside back to the frying pan, and once the shrimp are warmed up, plate them, and you're done.
